Cut from 100% boneless white fleshed albacore tuna loins. We select the highest quality fish for smoking, and deliver to a custom smoke house. Brined in our secret recipe of soy sauce, garlic, brown sugar, and more. Slowly smoked using fruitwood and smoked for hours. Big chunks of white tuna with a slightly sweet and smoky outer layer.
